Cucumber Recipe from Fran Hoffman

Thanks Fran for submitting this recipe for another great way to use all of those cucumbers!

Cucumber and Yogurt Salad

3 cucumbers
Onions sliced thinly – as much as you like
1 cup plain yogurt – or less, whatever you like
2 cloves garlic, minced
2 tablespoons dried dill

Peel and slice cucumbers. Layer cucumber slices in a salad bowl, sprinkling each layer lightly with salt. Let stand for 30 minutes or more. Pour off the liquid that has formed, pressing cucumber firmly.

Add sliced onions.

Mix yogurt, dill, and garlic. Pour over cucumbers and onions and mix. Refrigerate until thoroughly chilled.
