Recipe for Pannelle

This is a recipe that I copied from a Sicilian cookbook after Mama made Panelle for us one evening at the olive farm. They are delicioso!

“Panelle”
These are the chick-pea fritters, rectangular in shape (4x8mm) and about 2 or 3 mm thick. Dissolve 200 gms. of chick-pea flower in half a litre of water, together with some salt and parsley.

Place the pan on the heat and mix continuously until you get a rather dense paste. Spread this paste, while still hot, over the wooden moulds and fry in hot seed-oil. In the absence of these moulds, you may spread the paste in a baking pan and then divide it into the rectangular shapes according to the dimensions given above. Often these “panelle” are offered together with “cazzilli”.
