Recipe: Crunchy Thai Salad


I concocted a tasty little Thai salad with several things from this week's box.

Crunchy Thai Salad

4 cups thinly sliced cabbage
3/4 cup finely chopped radish
3 chives, thinly sliced
1/3 cup (packed) fresh cilantro, chopped
1/2 cup chopped peanuts (plus more for garnish if desired)

Combine above, then toss with dressing.

Dressing:
1 T sesame oil
1 T rice vinegar
1 T fish sauce (or soy sauce)
1 T fresh lime juice
1 tsp grated ginger
2 T sugar
salt and pepper to taste (red pepper is best!)
Garnish with slice of lime, a sprig of cilantro, and some more peanuts
