I baked some sunflower seeds the other day. The hard part is separating the seeds from the chaff. Once I did that I soaked them overnight in salt water to soften the shells. I let them dry for a few hours, sprayed olive oil on them and flavored them, and then I baked them in the oven at 300 degrees for 30 minutes.
I had three batches: Salt, cinnamon, and cayenne pepper. Not bad but too much work, and a lot of work eating them, too. Maybe that is why you never see a fat guy eating sunflower seeds.
